This "nut" is really a thick-shelled seed. Harvesting can be tricky because the outer part of the shell can cause dermatitis in some people due to the poison oak allergen it contains. If that doesn't complicate harvesting enough, the inside of the shell also contains a toxic resin, which makes opening the shell problematic. If it isn't done right, the cashew become inedible. Steaming is the most common method of opening the shells, but the high temperatures cook the nut inside. Many cashews labeled as raw have actually been steamed during opening.
This is because raw cashews contain urushiol, which is the same chemical that you’d find in poison ivy. It can cause the body to have a very similar reaction to one experienced from poison oak or ivy. If a high level of urushiol is ingested, it can be deadly. Cashew poisoning is rare, but those who handle them in order to manufacture them to get the shell off sometimes experience the side-effects.
